In this condensed class we will work together to learn all things pastry from sourcing ingredients to building confidence and everything in between. This is a combination of our pastry classes with added bonus recipes. We will make sweet and savoury choux pastry (think eclairs!), sweet and savoury all butter pastry (think galette and the perfect pie), sweet and savoury shortcrust pastry (think quiche and sweet tarts!) as well as rough puff and puff pastry. We will also use each type of pastry in both a sweet and savoury way making all kinds of delicous treeats throughout the weekend. Each student will go home with a batch of basic pastry, and a batch of puff pastry for their freezer. Included in this class is a meal with wine each day, a hands-on class with instruction, and a thorough recipe pack that includes bonus recipes and a section on sourcing ingredients.
