In this class we will work together to make falafel, two different types of kofta (one with beef and pork, and one with chicken), and grill bread. We will also make hummus, tzatziki, green tahini, and a chopped salad to pull this delicious meal together. We will talk through the process of making a perfect falafel from sourcing and soaking the chickpeas, to bringing it together and of course frying them as well as talk through tips and tricks for making a kofta that stays moist, and is is full of flavour. Grill breads are a simple bread that are easy to bring together – we will chat about working with yeast doughs, kneading by hand vs. in a machine, how to prep these ahead and more. Included in this class is dinner with wine, a hands-on class with instruction and a thorough recipe pack that includes bonus recipes and a section on sourcing ingredients.
