Breakfast, Breakfast, Breakfast...

Breakfast at anytime of the day is my favourite, so today was a good day. I made Ballymaloe apple museli, an almond tray bake, spotted dog, and blackberry, apple and sweet geranium jam. I met with Darina this evening, and thought last night that I would bake something, but then when I woke up this morning thought I would just use my spotted dog and the jam, I had time though, so was able to make the tray bake – which is so delicious. Oh, and I can’t forget the Irish breakfast I made – sausage, rashers, black and white pudding, a mushroom, tomatoes and a fried egg. I may have given my mushroom, and black and white pudding to Tim… Blah.

This afternoon’s demo started an hour early which was nice, and we were out before dark. Rachel taught the demo – home made pasta, lemon meringue pie, a few different pan fried fish ideas, salads, and a few new breads. After demo I made Darina tea, and sat down to chat with her about different opportunities when I leave here. I talked to her about a few of my ideas, and there was no mention from her that I’m on the wrong track – we shall see what happens when I am done here.

Tomorrow is all about fermentation, which I am looking forward to. Should be very interesting.

Off to the pub now for a pint, and then will head to bed early, it’s quite chilly here tonight.

“And now this is the mile high club… I mean mile high meringue.” Rachel Allen
